Preheat the oven to 350 degrees F (175 degrees C).
In a small pot, melt butter and sauté the vidalia onion(optional) to your preference, add the soup, and sour cream, simmer over low heat. You won’t actually don’t add all the soup. Use 75% of each can.
Combine potatoes, and 1.5 cup cheese into a large mixing bowl, mix in heated soup mixture,
season with salt and pepper, pour into a 9×13 inch dish.
Sprinkle the green onions(optional) over the top of the casserole then sprinkle the remaining
1.5 cup of cheese over the top of the casserole. Get a nice even coverage.
Bake 35 to 45 minutes, rest and serve warm.
